Blog Challenge #4: Shortbread Recipe

I made shortbread last night at about 11:30pm because I wanted to bring some to share with my guard team on Wednesday, but I wanted to test the recipe out first. It turned out to be delicious!!! They were soft, yet crumbly. I would give them a 4.5 stars. Here's the recipe for them:


Shortbread Cookies
Servings: 12

Ingredients:
2 cups butter, softened
1 cups white sugar
2 teaspoon vanilla extract
4 cups all-purpose flour

Directions:
1. Preheat oven to 350 degrees F (180 degrees C).
2. Cream butter and sugar until fluffy. Stir in vanilla; add flour and mix well.
3. Put through cookie press and form cookies onto baking sheets. Bake for 10-12 minutes.

Hint:
If you don't want to make cookies, you can just press the dough into the bottom of a pan and cookie it in there until the top is a light golden brown. I made it this way and it cooked at about the same rate as the cookies. Keep in mind that I changed this originally 12 serving recipe into a 2 serving recipe.

So, I will be making this shortbread to bring to my next guard practice, except I have one other small problem. One of the girls in my guard is gluten-free. I want to make something that she can have as well because we are always eating in front of her. I have decided to try making flour-less peanut butter cookies. I will post the recipe tomorrow if it ends up turning out to be better than I think. Scratch that, I will post it even if it sucks because I post all of the recipes that I try, good or bad.
